INGREDIENTS
  • 1 cup coconut or almond flour 
  • 1 cup almond milk or coconut milk
  • 2 large eggs 
  • 1 1/2 tsp baking powder 
  • A pitch of salt to taste
  • Strevia sweetener (optional)
  • 1 tsp pure vanilla extract 
  • 1/2 tsp ground cinnamon (optional) 
  • Coconut oil or any oil of your choice for greasing pan (NOTE)that the fat content is based on the quantity you use. I would advice you apply little quantity.  


Procedure!
  1. Whisk the eggs using a bowl or a handmixer, 
  2. Then add the rest of the liquid ingredient like the pure vanilla extract and the milk,
  3. mixed until they are all combined.  
  4. Add the coconut or almond flour, salt,  cinnamon, sweetener, baking powder 
  5. mixed until they are all combined into a thick paste.  
  6. Set a frying pan on low heat
  7. Add a few drops of oil.  
  8. When moderately hot, add the the paste, quantity as show in the picture.
  9. when bobbles started forming on top, flip the pancake to fry the other side 
  10. Your pancake is ready when both sides are light brown 
Enjoy with any choice fruits, oat meal, custard, tea / coffee, or any cold drink of your choice.
